Nick

Chef Nick Iaboni began cooking in high school as an apprentice at The Eagle’s Nest Country Club just outside of Toronto.

Immediately after graduating, he landed a stage role at Buca while in culinary school, working his way up the ranks to Chef de Cuisine at the age of 22. After Buca, Nick travelled to California to open Bar Monette in Santa Monica before returning to Toronto to open Bar Prima as Chef de Cuisine.

Julian

Chef Julian D’Ippolito worked abroad in Europe for four years where he was Michelin trained in Italy, Germany, and the Netherlands.

Upon his return to Toronto he became the Head Chef at Campagnolo until 2017 when he opened Dundas West favourite La Palma, becoming a partner in 2019. He currently oversees La Palma, Constantine, and now Bar Prima as Executive Chef.

Craig

Chef Craig first came on to the culinary scene in 2010 with the opening of his first restaurant Campagnolo, and since has developed a reputation for great food, a commitment to quality, and his eminently approachable personality.

He opened the popular Dundas West spot La Palma in 2017, followed shortly after by Yorkville’s Constantine located in The Anndore House Hotel in 2018. You may recognize him from the Food Network series Chef In Your Ear, or TLN’s Opening: Italy, among other chef-centric, food-focused series.
